A modern vegetarian restaurant with an intimate atmosphere, the COUP serves fresh, whole, organic, local, and made-from-scratch foods and beverages. Meals begin with a welcoming shrub shot of vinegar to help cleanse your organs and prepare your body to better digest its food. Dishes are creative and delicious, not to mention healthy. All COUP’s products have been selected based on deep ecological ethics, and it goes beyond the food. The COUP recycles all it can and only uses post-consumer recycled paper products. To offset its waste, the COUP plants 36 trees a month through Tree-Canada. It uses compost in its garden and has beehives nearby to produce some of the amazing vegetables that wind up on your plate.
